Commercial ice machine making noise
A cafe or bar machine that is loud, buzzing, grinding, rattling, or humming is often doing the cycle the manual already describes: compressor, condenser fan, water pump, a crack before harvest, and the slab or the cubes hitting the bin. Sometimes the new sound is a fan blade, a loose panel, scale on an auger, a gearmotor, a water pump, or a compressor mount. This page is an owner checklist from public manufacturer manuals we opened on 2026-10-17. It is not a service procedure, not a decibel rating, and not a bid.
A machine that also stopped dropping ice lives on commercial ice machine not making ice. Water on the floor lives on leaking water. Soft, cloudy, or off-tasting ice lives on cloudy or bad-tasting ice. The clean interval, and cleaner versus sanitizer, live on how to clean a commercial ice machine. Cartridges live on water filters and descalers. Where the condenser fan sits lives on air-cooled vs water-cooled and remote condenser vs self-contained. A dead pump, a dead gearbox, or a compressor the tech will not open lives on repair vs replace. Service-life ranges live on how long a commercial ice machine lasts. Legs, clearance, and the air path live on installation requirements.
Read the data plate, then that model’s current manual. The sentences below are the books we opened. A sibling cabinet can print a different normal-sound list, or no sound list at all.
None of the manuals and spec sheets opened for this page print a decibel rating. This page does not invent one. “Quiet operation” on a Scotsman user page, and “quiet operation” on an older Ice-O-Matic undercounter spec, are not a dBA number.
Sounds those books call normal
“Normal” here means the sentence is in the book named on the row. It is not a promise that every cabinet sounds like a CU50.
| Book | What it says you will hear | What that sentence does not cover |
|---|---|---|
| Scotsman CU50 user manual, form 17-3314-01. The Noise paragraph is on the page dated March 2010 | “Designed for quiet operation, but will make some noise.” During freeze it is normal to hear the fan moving air and the water pump circulating water. Ice hitting the bin, or ice already in the bin, can be heard during harvest | That paragraph does not name the compressor, a harvest click, or a timer. Do not paste the Prodigy click onto a CU50 |
| Scotsman self-contained Prodigy user manual, models CU1526, CU2026, CU3030, form 17-3645-01 Rev. D, last revised July 2, 2018. The Noise page we read is dated March 2017 | In ice-making mode: compressor, fan motor(s) if air cooled, and water pump. Cracking just before harvest. During harvest the harvest assist solenoid clicks twice as it pushes the ice out and returns. The ice drops as a slab and makes noise when it hits the bin. “These noises are all normal for this machine.” | Fan motors are the air-cooled sentence. A water-cooled CU2026W in that book is not promised a condenser-fan whoosh. These models are not in the directory |
| Scotsman remote-cooled user manual, MC0530, MC0630, MC0830, MC1030. Noise page dated June 2022. The file also has an April 2026 page | Same list: compressor, fan motors if air cooled, water pump, cracking before harvest, harvest mechanism may click twice, slab hitting the bin or dispenser. “These noises are all normal for this machine.” | The condenser fan on this system is the remote unit. The compressor is still on the list. That split is already on remote condenser vs self-contained. No decibel rating in that book |
| Ice-O-Matic GEMU090 service manual, part 9081430-02, date on the cover 9/11 (PDF created September 2011) | “Normal ice making produces very little noise; there will be sound from the compressor, fan and auger drive motor. If there is a drain pump it will cycle occasionally too.” An unusual noise “might be a sign that it needs to be cleaned of mineral build up.” | This is the GEMU090 undercounter. It is not GEM0450A and not a CIM cuber. “Very little noise” is not a dBA |
| Manitowoc technician’s handbook STH108, 6/21, Flake & Nugget models including RNP0320 | At the start of the sequence section: “Flake ice machines use an auger to remove ice from the evaporator. Occasional noises (creaks, groans, squeaks, or pops) are a normal part of the ice making process.” | The words on that line are flake. The RNP0320 operation section begins on the next lines of the same page. We are not rewriting “flake” into a nugget warranty. RNP0320A is the directory head in this family. The chart cell we read says RNP0320 |
Two water sounds sit next to those rows, and they are the cycle, not a second fault.
- Fill and dump on the CU1526-class book. The initial-start section describes harvest: the display shows H, the hot-gas valve opens, air-cooled fan motors shut off, the harvest assist runs, and “the purge valve opens to drain some water,” then the float valve refills the reservoir. A few seconds later the purge valve closes and the float keeps filling. Water moving at that moment is that paragraph. Water on the floor is the leak page.
- A drain pump that runs now and then, on the GEMU090 book, is the normal sentence above. The same book’s unusual-noise row, “drain pump cuts in and out,” points at a check-valve failure and says replace. Occasional is the first sentence. Cutting in and out as a fault is the second. That replace line is a technician’s.
A steady hum while the machine is in freeze, with ice still dropping on schedule, matches the compressor and fan those user manuals name. A thump or crack when a slab lets go matches the harvest sentences. A sound that is new, metal-on-metal, or present when the machine is off, is the next section.
What you can check before calling
Do these without opening a control box, without gauges, and without taking off a panel the owner manual does not assign to you. If the next step is a fan blade, a pump, a compressor mount, or an auger, stop. The “call a tech” section is the boundary.
1. Say when the sound happens
The useful call names the moment.
- All through freeze, and it has always been there: compressor, air-cooled fan, water pump, or, on a flake or nugget, the auger drive. That is the normal table.
- A few seconds at the end of freeze, then a drop: cracking, the harvest click on the Prodigy books, and ice hitting the bin.
- A gurgle only while water is moving: the purge-and-fill paragraph on the CU1526-class book.
- A new grind, squeal, or scrape, or a tick that speeds up with the fan: the fault table.
- Only when the cabinet is touched, or only from one panel: the panel row.
- The machine is off and something still runs or buzzes: that is not the freeze-cycle list. Close the ice-maker shutoff if water is involved, and call.
2. A cabinet that rocks
Leveling is the install check already written on leaking water and installation requirements. Manitowoc’s undercounter owner manual, Hoshizaki’s KM instruction, Scotsman’s CU50 user manual, and Ice-O-Matic’s CIM installation manual all tell the installer to level the cabinet. Those sentences are about the sheet of ice and about water staying in the trough. We did not find a sentence that says an unlevel cabinet is the cause of a loud compressor.
What an owner can still do: if the cabinet rocks, and a panel buzzes when it rocks, set the legs the way that install book describes, until the cabinet sits firm. Ice-O-Matic’s CIM book says level within 1/8 inch. That figure is the CIM book. Do not copy it onto a NEO. If the cabinet was sealed to the floor, do not pry it up. A floor that will not hold the machine is a floor problem.
3. Clearance, and a condenser you are allowed to clean
Air-cooled machines move air with a fan. A case of cups on the louver, or a decorative grille over the intake, is the blocked-air path on not making ice. Move the boxes. Leave the coil alone if your manual does not tell the owner to open that panel.
Who brushes the coil is per book. Scotsman CU50’s user manual tells the owner to remove the kickplate and front service panel and vacuum the fins, and not to dent them. Hoshizaki’s KM instruction says only qualified service technicians should service the appliance; the owner step on that family is the filter wash the maintenance schedule assigns, not a coil behind a tech’s panel. The not-making-ice page already splits those two.
Two fan-blade sentences are service text. They explain why a packed fan is past “a little louder.” They are not an owner brush job.
- Manitowoc service-course ICE2121 script notes, header date 1/10/2017: dirty condenser fan blades “cut down on air movement and may unbalance the blade putting excess strain on the motor bearings.” The same script starts that clean with the power shut off and a lockout. We are not reprinting the compressed-air steps.
- Manitowoc STH108 (6/21), in the flake and nugget handbook: clean the condenser at least every six months, disconnect electric power first, the fins are sharp, wipe the fan blades, and do not bend them. Cover the fan motor if the blades are washed. That warning is in a technician’s handbook.
A tick or scrape from the fan opening, in time with the blade, is the fan-blade row below. Do not reach in while it is spinning. Hoshizaki’s KM-350 / 520 / 660 service manual (the file we opened was created May 12, 2021) says moving parts, for example the fan blade, can crush and cut.
4. Scale, when the book ties the noise to minerals
A skipped clean is already the cleaning guide. This row is only the noise sentences.
- Manitowoc STH108 (6/21), “Remedial Cleaning Procedure for Heavily Scaled Ice Machines”: perform it if you have some or all of excessive grinding, popping, or squealing from the evaporator, grinding from the gearbox, and an ice machine that trips the speed sensor. The procedure title says “Heavily Scaled Flake Ice Machines.” The mix chart on the next page includes UNP0200, UFP0200, UFP0350, UNP0300, RNP0320, RFP0320, RNP0620, RFP0620, and RNP1100. Step 1 is remove the front and top covers. We are not reprinting the cleaner ounces or the four-hour soak. If the plate is an RNP0320A, the chart cell we read says RNP0320. Use the PDF that matches the serial before you treat the chart as the A-suffix procedure. A standard clean that the machine will not finish, because the speed sensor shuts it off, is the reason that handbook sends you to the remedial procedure. That is a tech visit, not a stronger acid. The lifespan page already separates this grind from a dead gearbox on a rusty cabinet.
- Ice-O-Matic GEM, MFI, and HEM technical service manual, cover date 5/11/26. GEM0450A is in that book. Service diagnosis: “Machine makes too much noise.” The first cause printed there is an evaporator coated internally with minerals, and the correction is clean with ice machine cleaner. The next cause is a dry motor bearing, “oil or replace motor.” Oiling a bearing and pulling the auger are the following pages of that service manual. We are not reprinting them. The owner path is the clean interval on the cleaning guide, with the cleaner that model lists. The GEMU090 sentence that an unusual noise might mean mineral buildup is the 2011 undercounter book, not this GEM0450 page.
- Hoshizaki F-300BAF service manual, number 73072, revised 01-25-2007, abnormal-noise row for the evaporator: scale on the inside wall of the freezing cylinder, clean periodically with the product that sheet names. That chart is the F-300BAF book. It is not the F-330BAK procedure. The F-330BAJ service manual, number 73211, revised 4-24-2025, does not reprint that abnormal-noise table. Under no-ice it lists gear-motor mechanical failure and fan-motor mechanical failure or a fan blade binding. The directory flaker is F-330BAK. The service PDF we opened is the BAJ predecessor. Confirm the BAK service manual if the plate says BAK.
White crust, soft cubes, or a bad taste along with the new noise is the cloudy-ice page plus the clean. A filter change is not that clean. The filters page already says so.
5. A panel that buzzes when you press it
Two service charts name a loose panel. They are not permission to open every cabinet.
- Ice-O-Matic GEMU090 service (9081430-02, 9/11), unusual noise: “Panels vibrating — check panels, adjust fit, tighten screws.”
- Scotsman SRC035 and SRC065 service manuals, pages dated January 2026. SRC035’s specifications page says there are six models, all air-cooled; the two lines we could read are SRCP035A-1SU and SRCG035A-1SU. SRC065 lists SRCP065A-1SU, SRCG065A-1SU, SRCP065A-1SS, and SRCG065A-1SS. “Makes excessive noise”: panels vibrate, mounting screws loose, tighten screws. The same table names a bent fan blade, a broken fan-motor mount, a loose compressor mount, and worn water-pump bearings. Those five rows are those SRC books. They are not the CU50 user manual and not a Prodigy head. Do not copy “replace the pump” onto a KM because an SRC chart said it.
Owner check: with the machine running, press the outside of a panel. If the rattle stops under your hand, the cause those charts name is that panel. An outside screw you can see, on a panel your user manual already tells you to take off and put back, can be seated. CU50’s kickplate is that kind of panel in the CU50 book. A screw inside a tech’s panel, a compressor bolt, and a fan-motor mount are the stop line.
What each sound usually points to
“Usually” means the cause printed on the manual we cite, not a promise about your serial number.
| What you hear | Where the cited books point | Check this | Stop here |
|---|---|---|---|
| Steady hum in freeze, ice still drops, sound is not new | Compressor, air-cooled fan, water pump (CU50; CU1526-class; MC0530-class remote manual) | Confirm it is freeze, not a new grind. Air-cooled only for the fan sentence | You would have to open the cabinet to “see if the compressor is bad” |
| Crack, then a thump, once per cycle | Cracking before harvest, slab or cubes hitting the bin (same Scotsman user manuals) | Nothing, if ice is dropping and the sound is the old one | Ice is not dropping. That is not making ice, including a slab that stays on the plate |
| Two clicks during harvest, then the drop | Harvest assist solenoid, CU1526 / CU2026 / CU3030 book. The remote MC book says the mechanism may click twice | Only if the data plate is one of those models | Borrowing the click count for a CU50, a KM, or a NEO |
| Gurgle only as harvest starts | Purge valve dumps, float refills (CU1526-class initial-start harvest description) | Look for water in the drain, not on the floor | Water on the floor or a hose that is off. Leaking water |
| Tick or scrape in time with the fan | Fan blade deformed, does not move freely, or caught on something (Hoshizaki F-300BAF abnormal-noise chart; DCM-270BAH service, number 73110, revised 5-26-2005, “fan blade caught on foreign object”). F-330BAJ service, revised 4-24-2025: fan blade binding, under no-ice. GEMU090: fan blade rubbing | Power off if you are about to put a hand near the blade. Move boxes off the louver | Replacing a blade, spinning a blade by hand, or opening a panel your manual does not assign. Hoshizaki’s remedy lines say replace |
| Buzz from one panel, stops when you press it | Loose panel screws (GEMU090; SRC035 / SRC065, January 2026, those models only) | Seat an outside screw your user manual already has you remove | Compressor mounting bolts. The SRC table’s “mounting loose — check mounting” is a service line |
| New grind or squeal on a flake or nugget, ice may be suffering | Manitowoc STH108: excessive grinding, popping, or squealing from the evaporator, or grinding from the gearbox, on the models in that remedial chart, including RNP0320. Ice-O-Matic GEM manual, 5/11/26: minerals on the evaporator, or a dry motor bearing. Hoshizaki F-300BAF: worn gear-motor bearing or gear; scale in the freezing cylinder | The model’s clean, if the owner manual assigns it and the machine will still run it. Cleaning guide | Cover removal, auger removal, oiling a bearing, a gearbox. Repair vs replace if the gearbox is the diagnosis |
| Auger motor hums and does not turn, and ice has stopped | Ice-O-Matic GEM / MFI / HEM service diagnosis, 5/11/26: auger cannot turn; high auger-motor amp draw from bearings, gear-motor condition, or scale; motor failure, auger relay, or stripped gears | Power off. Tell the tech it hums and the auger does not turn | Any of the pull-the-auger steps in that manual |
| Occasional creak, groan, squeak, or pop on a flake machine that is still making ice | Manitowoc STH108: occasional noises of that kind are “a normal part of the ice making process” on the flake line at the top of the sequence section | Compare it with “excessive” grinding on the remedial page. Occasional is the first note. Excessive is the other page | Treating every auger sound as a gearbox, or treating the flake note as a nugget warranty |
| Bang in the pipes when a valve closes | Hoshizaki KM-81 / 116 / 161 instruction: water hammer is a plumber’s item and can damage the appliance. Already on the leak page | Do not add a clamp as a test | Re-piping. A licensed plumber |
| Click or chatter from a water valve on a DCM-270 dispenser | DCM-270BAH(-OS) service, revised 5-26-2005, abnormal noise: water valve, foreign matter on the plunger, remedy clean. The same chart lists a shutter solenoid with foreign matter on the plunger | That book, that model | Copying a 2005 DCM plunger clean onto a KM inlet valve. The KM valve notes are the leak page, and they are a tech’s |
| Refrigerant line buzzing against the cabinet, in time with the compressor | Hoshizaki F-300BAF and DCM-270 abnormal-noise charts: refrigerant lines rub or touch other lines or surfaces. GEMU090: “tubes rubbing” | You can hear it. You do not reposition tubing | Separating lines, gauges, adding refrigerant. The data-plate gas is a repair vs replace topic |
| Compressor much louder than it used to be, or clattering | F-300BAF abnormal noise: compressor bearings worn out or cylinder valve broken (replace), or mounting pad out of position (reinstall). SRC035 / SRC065, those models only: compressor vibrates, mounting loose | Note whether ice is still dropping | Opening the compressor terminals, a mount bolt, or the refrigerant circuit. Hoshizaki’s KM instruction still says only a qualified tech services the appliance |
A water-cooled cabinet does not get the air-cooled fan sentence. Scotsman’s user manuals say “fan motor(s) if air cooled.” The compressor and the water pump are still on those lists. Condenser-water noise in a drain, while the machine runs, can be the condenser discharge the leak page already separates from a leak. It is not a fan blade.
A remote condenser moves the condenser fan out of the room. The MC0530-class noise paragraph still lists the compressor, the harvest click, and the slab. Remote condenser vs self-contained is that split. It is not a dBA promise.
Stop and call a qualified refrigeration tech
Stop when the next action is any of these.
- The fan blade, the fan motor, or the shroud. Hearing a tick is the owner’s report. Replacing a bent blade, a broken motor mount, or a blade that does not spin freely is the remedy line in the Hoshizaki and SRC charts. Those charts say replace.
- The water pump, including a pump that squeals or whose bearings the SRC chart calls worn. KM-350 / 520 / 660 service lists a pump-motor bearing worn out or locked rotor and a mechanical seal worn out under no ice production. That is a no-ice chart, not a noise chart. A pump that has reached it has stopped making ice. We are not describing a pump swap.
- The compressor, its mounting pad, a start component, or the refrigerant circuit. Gauges, adding charge, and “topping off” the gas on the data plate are out. Repeated breaker trips and a burning smell are the same stop already on the not-making-ice page: reset a breaker once, then leave it off.
- Refrigerant lines that have to be moved, and any valve adjustment. The DCM-270 plunger clean and the F-300BAF “separate the lines” remedy are technician lines from those books.
- An auger, a gearmotor, or a gearbox. Grinding on a Manitowoc flake or nugget in the STH108 symptom list, a Hoshizaki gear-motor mechanical failure, or an Ice-O-Matic auger that hums and does not turn. The GEM manual’s auger-removal pages start with disconnecting power and taking the top panel off. Do not start them. A dead gearbox on a rusty cabinet is the repair vs replace auger row, not another acid cycle.
- A heavily scaled flake or nugget that will not finish a normal clean because a speed sensor or a protector opens. Manitowoc’s remedial procedure and Hoshizaki’s F-330BAJ gear-motor protector row both belong to a tech who has the current book.
- Any panel the owner manual does not give you. Hoshizaki’s KM and F-330BAJ service manuals say only qualified service technicians should service the appliance. CU50’s kickplate is an exception that user manual writes down.
- You do not have the manual that matches the data plate. An F-300BAF noise chart is not an F-330BAK chart. An SRC065 pump row is not a CU50 row. A DCM-270 water valve is not a KM valve. A flake “occasional creak” note is not a nugget warranty.
Tell the tech the model, the serial, whether the machine is air-cooled or water-cooled, when the sound happens, whether ice is still dropping, and what you already checked (rocking cabinet, boxes on the louver, filter date, last clean). That is the useful call. It is not a quote, and it is not health-code advice.
What this page is not
- Not a service manual. No blade replacement, no pump oil, no auger pull, no ohm test, no refrigerant pressure, no ounce table.
- Not a decibel comparison. The books opened here do not print one. A blog figure is not a Hoshizaki, Manitowoc, Scotsman, or Ice-O-Matic spec sheet.
- Not the “no ice” page. A harvest that does not finish is not making ice. This page is the sound, including the sound of a harvest that is still working.
- Not the leak page. A purge into the drain is normal on the CU1526-class book. Water on the floor is leaking water.
- Not the cleaning page or the filter page. Intervals and cartridges stay on how to clean and filters and descalers.
- Not a remote-condenser design page. Line-set limits stay on remote condenser vs self-contained.
- Not a health-code or noise-ordinance opinion. NSF listings and the installation manual are what you show an inspector.
- Not a review and not a price.
