How to size a commercial ice machine
Commercial ice machines are sold by pounds of ice in 24 hours, not by “small / medium / large.” Manufacturer “up to” numbers are measured at about 70°F air and 50°F inlet water. In a 90°F kitchen with 70°F water, the same machine often makes 15–30% less. Ice-O-Matic, Scotsman, and Manitowoc publish both conditions on most current sheets; use the 90/70 column if the machine will live next to a range.

Work the number, then add a buffer
- Count peak-day guests, seats, rooms, or iced drinks — not a quiet Tuesday.
- Multiply by the starting point in the table.
- Add prep, display, bagged, and catering ice as separate lines.
- Add a 15–25% reserve for weather, a festival weekend, or a dirty condenser.
- Compare the total to the machine’s 90/70 production if you have it; otherwise assume you will not get the brochure “up to” number.
A bin that holds 60–80% of a day’s make is a common planning range. A short Sunday-service spike cares more about bin pounds than 24-hour rating.

Worked cafe
A 32-seat cafe sells about 180 iced drinks on a hot Saturday and uses ice in a few cold-brew kegs.
- Drinks: 180 × 0.5 lb ≈ 90 lb (cafe range 0.35–0.6 lb/drink from application guides).
- Staff / overflow: 15 lb.
- Subtotal 105 lb. Reserve 20% → about 125 lb/day.

Worked cocktail bar
A 48-seat cocktail bar, one well, no restaurant.
- 48 × 3 lb = 144 lb.
- Bottle wells and a second garnish station: +40 lb.
- Reserve 25% → about 230 lb/day.
Gourmet cubes melt slowly but machines that make them are small (often 50–65 lb/day). Many bars run a gourmet undercounter at the well and a half-dice or crescent machine in the back. See best ice for a cocktail bar.
What the rating does not include
- Air-cooled machines need intake and discharge clearance. A boxed-in louver is a derate.
- Water-cooled machines use extra condenser water; many cities restrict them. See air-cooled vs water-cooled.
- Soft water, a clogged filter, or skipped descaling cuts harvest. See filters and descalers.
- Voltage: a 115 V cord-and-plug undercounter is not the same electrical job as a 208–230 V hardwired modular head.
