Commercial ice machine leaking water
A cafe or bar machine that is leaking water is often a drain that cannot leave, a hose or fitting that is loose, a bin joint that is not sealed, condensation on a cold line, a cabinet that is not level, or scale holding a water valve open. Sometimes the water on the floor is the condenser discharge from a water-cooled machine, which is supposed to run and is not ice-making water. This page is an owner checklist from public manufacturer manuals. It is not a service procedure, not a replumb, and not a bid.
A backed-up drain that melts the ice you just made, so the bin looks empty, lives on commercial ice machine not making ice. Cleaner, sanitizer, and the interval live on how to clean a commercial ice machine. Slope, air gap, inlet size, and the pre-delivery list live on installation requirements. Cartridges and nickel-safe descaler live on water filters and descalers. A pump, valve, or evaporator that has become a replacement lives on repair vs replace. How many years a cabinet usually stays in service lives on how long a commercial ice machine lasts. Condenser gallons and once-through limits live on air-cooled vs water-cooled.
Read the data plate, then that model’s current manual. The sentences below are the books we opened on 2026-10-15. A sibling cabinet can print a different slope, a different air-gap figure, or no air-gap figure at all.
Water that is supposed to leave
Not every wet spot is a failed part. These books describe water that is designed to move.
- Harvest purge. Manitowoc’s undercounter owner manual (part 040005890, Rev 07, 08/22) purges remaining trough water down the drain at the start of a cycle, and again in harvest. Scotsman’s Prodigy service manual (models including C0330) opens a purge valve in harvest to drain reservoir water. Ice-O-Matic’s CIMU undercounter service manual (header date 5/21/26) pumps mineral-laden water out of the trough when harvest starts. Water in the drain line during harvest is the design. Water on the floor is not.
- A timed fill that overflows into the drain. Hoshizaki’s KM-350 / 520 / 660 service manual tells the tech to confirm that the water tank fills and overflows during the 1-minute fill and harvest. On that book, overflow down the drain during that fill is the check that fill is working. It is not permission to ignore water coming out of the cabinet.
- The first ice in an empty bin. Scotsman CU50 user manual (17-3314-01): the first batches melt until the bin has cooled. Filling the bin takes 8 to 10 hours of continuous run. Below 65°F, a low bin level can be normal on that page. Melt in a cold, empty bin is not a leak. Standing water that never leaves is the drain section below.
- Water-cooled condenser discharge. Scotsman’s Prodigy Plus E user manual (form 17359902, C1448 and C1848): water-cooled models “discharge warm water into the building’s drain.” That stream is condenser water. It is not a surprise if the line is actually in the drain. It is a leak if the hose is off, teed into the bin, or pouring onto the floor. Most small cabinets in this directory are air-cooled, so this line may not exist. See the condenser section.
What you can check before calling
Do these without opening a control box, without gauges, and without taking off a panel the owner manual does not assign to you. If the next step is a float adjustment, a valve rebuild, or a new pipe, stop. The “call a tech” section is the boundary.
1. If water is actively flooding, shut it off
Hoshizaki’s KM-81 / 116 / 161 instruction manual (the B_K book that includes KM-81BAK) gives the owner two stop lines:
- If water collects in the bin and will not drain, turn the icemaker off and close the water supply shutoff. Call for service.
- If water seeps from the base, turn the appliance off and close that shutoff. Call for service. The same notice says failure to do so can mean costly water damage.
That is the first move when the floor is getting wet. Resetting a breaker does not stop a water valve. The ice-maker shutoff is the valve on the cold potable line to this machine, not the shutoff for the whole kitchen. Hoshizaki’s KM-350 / 520 / 660 instruction says a plumbing permit and a licensed plumber may be required in some areas. Check your local plumbing code and a licensed plumber before anyone reties these lines. The sentences below are what the books print. They are not a code interpretation.
2. Say where the water is
The useful call names the spot. From the outside, before any panel:
- At a fitting on the back, on the incoming water line or where a drain hose meets the cabinet. Manitowoc’s undercounter inspection line: “Check all water fittings and lines for leaks.” Scotsman CU50’s install checklist asks whether the water supply and the drain have been checked for leaks. Look. A hose that has slipped off a fitting you can see, and that pushes back on and stays, can be seated. Do not keep tightening a nut, and do not tighten a plastic fitting. Ice-O-Matic’s CIM installation manual (part 9081484-01 Rev. V, 8/2024) says the purge-drain fitting is plastic: do not heat it, and do not over-tighten it. A fitting that is still wet after the hose is seated is a tech call.
- Down the seam between a modular head and the bin. That is the gasket section.
- Standing in the bin, with the floor still dry. That is a bin drain, a cap, or something in the bin. It is also the “no ice by afternoon” pattern on the not-making-ice page.
- Droplets on a cold pipe, with the fittings dry. That is the condensation section.
- Out of the floor drain or the air gap, with the machine’s hoses still on their fittings. That is a building drain that is not taking the water.
- A second hose that runs only while the compressor runs, and the sheet says water-cooled. That is condenser discharge.
3. Drain line, floor drain, and air gap
Melt water and purge water have to leave. A hose with a kink, a line that runs uphill, a tee the manual forbids, or a floor drain that is already full puts water back into the bin or out onto the floor.
The slope and the air-gap figure are not one number. The installation guide already prints the full pre-install table. These are the leak-relevant lines from the books we opened:
| Book | What it says will put water where it should not be | Air gap in that book |
|---|---|---|
| Manitowoc undercounter IOM (U140/190/240/310 class, 08/22) | Drain lines need a 1.5 inch drop per 5 feet and must not create traps. The floor drain must be large enough for every drain on the machine. Run a separate bin drain and, if water-cooled, a separate condenser drain. Vent the ice-machine drain. Do not vent the condenser drain. | No inch figure in the drain section we read. The checklist asks for a separate vented bin drain. |
| Hoshizaki KM-350 / 520 / 660 instruction | Icemaker drain, bin or dispenser drain, and water-cooled condenser drain run separately. Horizontal runs need 1/4 inch of fall per foot. A vented tee is required. A smaller story than that book’s pipe size is on the KM-81 row. | At least 2 vertical inches between the end of each of those pipes and the floor drain. |
| Hoshizaki KM-81 / 116 / 161 instruction | Gravity drain: 1/4 inch fall per foot, plus a vented tee, vent extended at least 12 inches above the drain outlet. Drain outlet on that book is 1/2 inch FPT; bin and drip-tray drains are 3/4 inch FPT. A smaller line “will reduce water flow and may lead to water leakage or flooding.” If the bin drain clogs, water can build up and overflow. | At least 2 vertical inches. |
| Scotsman CU50 user manual | Restrictions, kinks, or a line that does not slope back water into the bin and melt the ice. Tubing must be vented. Pump models can discharge as high as 10 feet; the pump includes a check valve. A gravity cabinet is not a pump cabinet. | “Often an air gap is required by local codes.” That book does not print a 2 inch figure. |
| Scotsman Prodigy Plus E user manual, 17359902 (C1448, C1848) | Do not tee the machine drain into the bin drain. Do not tee a water-cooled condenser drain into the reservoir or the bin drain. Use rigid tubes. Vent the reservoir drain; a vertical vent about 8–10 inches lets the gravity drain empty and keeps a surge from discharging water out the vent. The PDF text says horizontal runs need “a 1/4 inch per fall per foot of run.” The sibling E-series manual already cited on the installation page (form 17359901, which lists C0330) prints 1/4 inch fall per foot. We are not merging those two phrases. | “Follow local codes for air gap.” The 1 inch anti-backflow air break that book describes is inside the reservoir, between the inlet tube and the highest reservoir level. It is not the floor-drain air gap. |
| Ice-O-Matic CIM installation manual, part 9081484-01 Rev. V, 8/2024 | Route the bin drain, purge drain, and water-cooled condenser drain individually. “Drain lines should be vented to prevent back flow/pressure into the machine.” Flexible tubing is not recommended. Condensate pumps are not recommended. | “All drain lines must be installed per local codes.” No 2 inch figure in the drain note we read. |
Owner check, and then stop:
- A kink you can see. Unkink it.
- A hose whose end is in a bucket that is already full. Empty the bucket. Do not leave the hose submerged.
- A hose you can see running uphill to the drain. That is a plumber’s correction, not a closer’s. Do not cut pipe tonight.
- A floor-drain grate buried under a mat, a case of cups, or obvious debris, with water coming up out of the air gap. Clear the grate. If the building drain is still full, call a plumber. Do not snake a line you cannot see.
- Water spitting from a vent on the reservoir drain. The Prodigy Plus E book says that vent is there so a surge does not discharge. Water out of the vent means the drain is not taking the flow. Do not cap the vent.
- A dead drain pump. CU50’s install test is to pour a couple of quarts into the bin; on a pump model the pump should start and water should leave. If it does not, that is a parts call. The kit number for converting a CU50 gravity cabinet is already on the installation page. Do not add a pump the CIM manual says it does not recommend.
Hoshizaki’s KM-81 instruction also says water hammer has to be resolved by a qualified plumber before the appliance is installed, and that water hammer can damage the appliance and lead to leakage or flooding. Banging pipes when the valve closes, followed by a drip at a fitting, is that sentence. It is not a hose clamp.
4. Inlet line and distribution hoses
Ice-making water comes in through a valve, then a hose or a distribution tube carries it across the evaporator. A crack, a loose nut, or a hose that has come off dumps water into the bin or out of the cabinet. What an owner can see, and what the service book names, are different.
Owner-visible:
- The supply tubing at the back. CU50’s user manual routes 1/4 inch OD copper to the inlet of the water solenoid and says to check connections for leaks. Leave enough slack to pull the cabinet out. A line that is tight against the wall and then yanked is how a fitting starts dripping. Hoshizaki’s KM instruction and CU50 both say to leave that slack, in different words.
- A hose hanging off a fitting you can see with the bin door open, if your manual shows that hose as an owner-access part. CU50’s winterizing steps describe a rubber cap under the reservoir, near the back wall of the bin. If that cap was pulled for winterizing and not put back, water from the reservoir goes into the bin. Seat the cap you removed. If you did not remove it, do not pull it as a test.
Service-manual names, which are the stop line, not a repair script:
- Scotsman CU50 service PDF (pages in that file are dated from 2010 through December 2019): “pump hose disconnected — check hose”; “inlet water valve leaks through during freeze — check inlet water valve”; “water leaking from reservoir — correct leak.” The same diagnosis says a very long freeze can be that inlet valve leaking through.
- Scotsman Prodigy service manual (models including C0330): under shutdown on maximum freeze time, “water leak — check purge valve, curtain, sump, pump hose,” and “inlet water valve leaks through during freeze.” A long freeze cycle on the air-cooled chart repeats “water leak — check purge valve, check curtain” and “water inlet valve leaks through.” Incomplete ice on that chart includes a water distributor with partially plugged holes. A short-freeze note names a sagging water distributor mounting bracket and points at service bulletin PS-9-2012. We did not open that bulletin. We are not describing a bracket repair.
- Hoshizaki KM-350 / 520 / 660 service manual, yearly maintenance: “Water hoses — inspect the water hoses and clean/replace if necessary.” The same book says only qualified service technicians should service the appliance.
- Ice-O-Matic CIM technical service manual, 9/2025 (Elevation Series, CIM0320 through CIM2046; we read the Webstaurant copy of that PDF): every-six-months maintenance includes “check for leaks of any kind: water, refrigerant, oil” and “inspect the evaporator water distribution tube” so water is even across the plate. The same section says to disconnect electrical power before adjustments. That is a tech list.
- Ice-O-Matic CIMU service manual (a different undercounter family from Elevation CIM, header 5/21/26): the distribution tube is a tube within a tube at the top of the evaporator. Mineral buildup is a reason that book gives for taking it apart. Reassembly direction is in that service manual. We are not reprinting it. A CIM head and a CIMU cabinet do not share that procedure.
A plated evaporator and a hardware-store acid are already forbidden on the filters page. Plugged distribution holes are a clean, with the cleaner that model lists, or a tech visit. They are not a stronger acid.
5. Reservoir, float, and the inlet valve
“The trough is overflowing” means different things on different boards. These are the books. They are not one float.
- Manitowoc undercounter checklist: shallow or incomplete cubes include “water trough level is too high or too low.” The correction on that row is “check the water level,” plus level the machine, replace a restricted filter, and keep pressure at 20–80 psi. The same checklist, on a slow harvest, lists a water regulating valve that leaks in harvest mode on water-cooled models. The correction printed there is replace the water regulating valve. That is a parts replacement, not a closer’s adjustment. We are not walking through a float or a regulating valve.
- Hoshizaki KM service manual: scale on the float switch can make the float stick, and the book then sends the tech to a float-switch cleaning. That cleaning is in the service manual. The same manual says only qualified service technicians should service the appliance. An owner does not pull the float to clean the stem.
- Hoshizaki service bulletin SB20-0002 (18 March 2020): the inlet solenoid’s diaphragm can be damaged where the water is hard or chlorine is high. Clogged or dirty inlet screens are called out as not a warranty repair. The bulletin is a valve reassembly for a technician. We are not reprinting the plunger orientation. The practical line is the filter and the clean. A valve that will not shut, after the shutoff is closed and water stops, is a tech call when you open the shutoff again and water still runs into a machine that is off.
- Ice-O-Matic CIM service manual (9/2025): the high float switch rises with the water and signals the board to close the water inlet valve. If the sump keeps rising past that point, the next tests in that book are the float, the valve, and the board. We are not printing the LED or voltage checks.
- Ice-O-Matic CIMU service manual: if the float valve does not stop the water, that book says make sure pressure does not exceed 60 PSI, and to add a regulator if it does. If pressure is not the problem, the float plunger or the valve may need cleaning or replacement. That 60 PSI ceiling is the CIMU book. It is not the CIM installation manual’s 80 psi maximum, not Manitowoc’s 80 psi, and not Hoshizaki’s 113 PSIG. Bending the float arm, which that CIMU book also describes, is a service step. We are not describing it.
A machine that is off, with the ice-maker shutoff open, and water still running into the cabinet, is an inlet valve or a float that is not closing. Close the shutoff. Call. Do not cycle the power to “reset” a water valve.
6. Bin drain and the bin seal
The bin has its own drain, and on a modular machine it has a gasket where the head sits.
- Nothing but ice in the bin. CU50’s user manual: objects such as bottles are unsanitary, and labels can come off and plug the drain. Hoshizaki’s KM instruction: the bin is for ice only. That sentence is already on the cleaning guide. A label in the drain is an owner check. A drain you would have to disconnect and rod out is not.
- Hoshizaki KM-81 instruction: if the ice-storage-bin drain clogs, water can build up and overflow. The instruction says follow the cleaning section as often as conditions require so the drain stays clear. The KM-81 service manual (73262, issued 10-27-2025) says follow the instruction’s bin-drain section every 3 months or as often as necessary. Those are two intervals. Use the PDF that matches the serial. The owner action when water is already standing in the bin and will not leave is still the shutoff-and-call line above, not a new drain.
- Scotsman Prodigy Plus E user manual (17359902): before the head goes on the bin, check the bin-top gasket for gaps and tears and fill gaps with food-grade sealant. If a used bin is reused, “the used bin top edge gasket must be replaced. Water leaks could occur if the gasket tape is not replaced.” Scotsman’s Prodigy Plus flake and nugget service manual says the same idea: a torn gasket on a reused bin can cause water leaks, and those leaks are not covered by warranty in that book. Water running down the outside of the bin from the head joint is that seam. Lifting the head off to replace gasket tape is an installer job. The C1448 manual says the machine is heavy and to use a hoist if necessary. Do not slide a head on a wet gasket to “see if it stops.”
7. A machine that is not level
An unlevel cabinet lets water run to one side of the trough and over the edge, and it makes an uneven sheet. The correction is the legs, until the book says the cabinet is sealed down.
- Manitowoc undercounter IOM: the installation area has to hold the machine and a full bin, and the equipment must be level side to side and front to back. Screw the leveling legs on, then level it. The troubleshooting checklist lists “ice machine is not level” on the slow-harvest row and on the shallow or incomplete-cube row. The correction is “level the ice machine.” If the cabinet was sealed to the floor the way that book allows, do not pry it up. That seal is an installer decision, and an inspector’s version of it is a local question.
- Hoshizaki KM instruction: a firm, level foundation. Level the bin or dispenser left to right and front to rear.
- Scotsman CU50: level the cabinet so all four levelers touch the floor. The Prodigy Plus E book levels the bin and the head with the bin-leg levelers.
- Ice-O-Matic CIM installation manual (Rev. V, 8/2024): level within 1/8 inch in all directions. That figure is the CIM book. We did not find a 1/8 inch sentence in the Manitowoc undercounter level paragraph. Do not copy it onto a NEO.
A carpenter’s level on the top of a leg-mounted cabinet is an owner check. Turning a leg until the bubble is centered is the same move the install book already describes. A cabinet that rocks because the floor is soft is a floor problem, not another turn of the leg.
8. Scale
Scale is how a valve stops closing and how distribution holes stop being round. It is not a separate leak part.
Hoshizaki SB20-0002 ties a damaged inlet-valve diaphragm to hard water or high chlorine. The KM service manual ties a sticking float switch to scale. The Prodigy service chart ties incomplete ice to a distributor with plugged holes. Manitowoc’s undercounter checklist ties a dirty machine to a failed harvest, and the correction there is descale and sanitize. Ice-O-Matic’s CIMU book says a purge valve that leaks through during freeze extends the freeze, because the float then lets more warm water in. The purge valve on that book is supposed to be fully closed in freeze. Cleaning or replacing it is the service manual.
The interval and the cleaner-versus-sanitizer split stay on the cleaning guide. A cartridge that is past its gallons stays on the filters page. If the plate is crusted and harvest is already failing, that cleaning page says an extremely dirty machine comes apart. That is a tech visit, not more acid.
9. Water-cooled condenser discharge
If the data plate or the sheet says air-cooled, you do not have this drain. If it says water-cooled, a second water line leaves the cabinet whenever the refrigeration system is rejecting heat. People report that stream as a leak when the hose was never put in the floor drain, or when it was teed into the bin drain.
What “normal discharge” means is per book. Do not average these temperatures.
| Book | What it prints about condenser water leaving the machine | Who that step belongs to |
|---|---|---|
| Manitowoc undercounter IOM | Water entering the condenser must not exceed 90°F. Water leaving must not exceed 110°F. Flow must not exceed 5 gallons per minute. Allow a 7 psi drop between the condenser inlet and the outlet. Do not vent the condenser drain. Insulate the condenser drain to limit condensation. | Installation limits in that book. A vent that is spitting water is the “do not vent” sentence, for a plumber. |
| Hoshizaki KM-350 / 520 / 660 instruction | Condenser inlet should not drop below 45°F. Condenser drain outlet should be 104–115°F, checked 5 minutes after a freeze starts. The book then tells the installer to turn the water-regulating valve’s adjustment screw if the temperature is outside that range. | Installer. We are not describing that screw. |
| Scotsman Prodigy Plus E user manual, 17359902 (C1448, C1848 only) | Factory discharge pressure 245 PSIG, “which should yield a freeze cycle discharge water temperature of about 105–110°F.” The note says “adjust if necessary.” | That manual’s models. We did not read this cell in the C0330 manual. Do not copy 245 PSIG onto a C0330. |
| Ice-O-Matic CIM service manual, 9/2025 | Maintenance step: water regulating valve set so discharge pressure stays at 250 psi, and water leaving the condenser between 100°F and 110°F. | Service manual. Gauges and the valve adjustment are the tech’s. |
Owner check: the condenser hose is on its fitting, it is not teed into the bin or the reservoir (Scotsman and Ice-O-Matic both forbid that tee, in the words already in the drain table), and its open end is at the floor drain with whatever air gap that book requires. Gallons per 100 lb, and why many cities restrict once-through cooling, stay on air-cooled vs water-cooled. A hose that is off is a leak. A hose that is in the drain and running warm water while the machine makes ice is the design.
10. Condensation in a humid kitchen
A cold pipe in damp air sweats. The puddle is under the pipe. The fittings are dry. That is not an inlet valve.
- Manitowoc undercounter IOM: “Insulate water inlet lines to prevent condensation.” Insulate the bin drain and the water-cooled condenser drain for the same reason.
- Ice-O-Matic CIM installation manual (Rev. V, 8/2024): “Cold water drains should be insulated to prevent condensation from forming.” The same book says a condensate drain connection is available in the base of 22 inch and 30 inch ice makers, and that it may be necessary in high humidity. The tube sits below the purge connection. The install steps (silicone, inserting the tube, loosening frame screws) are in that manual. We are not reprinting them. If the kitchen is humid and that tube is missing or has pulled out, water at the base of a 22 inch or 30 inch CIM can be that connection. Seating a tube that has simply slipped out, and that stays, is the same outside-hose check as above. Loosening the frame is not.
- Hoshizaki KM-350 / 520 / 660 instruction: there is a condensation drain (3/8 inch OD hard tube on that page). It may tie into the icemaker drain or run alone. It still gets the 2 inch air gap. A condensation line that has come off the back of the head looks like a leak at that fitting. If it is an outside hose and it pushes back on and stays, seat it. If it will not stay, call.
Wrapping a sweating line in a bar towel is not the insulation those books describe. If the line is buried in a wall or a cabinet, the insulation is a plumber’s or installer’s job. Droplets on an uninsulated cold line, with dry fittings, are a reason to insulate. They are not a reason to replace the water valve.
What each wet spot usually points to
“Usually” means the cause printed on the manual we cite, not a promise about your serial number.
| What you see | Where the cited books point | Check this | Stop here |
|---|---|---|---|
| Water running while the machine is off, shutoff still open | Inlet valve or float not closing (CU50 service: inlet valve leaks through during freeze; CIMU: float valve will not stop the flow) | Close the ice-maker shutoff. Water should stop | It does not stop, or it starts again as soon as you open the valve. Call. Do not rebuild the valve |
| Bin full of water, floor dry, ice melting | Restricted drain, kink, or standing water (CU50). Clogged bin drain can overflow (Hoshizaki KM-81) | Kink, full bucket, nothing but ice in the bin, CU50 cap only if you removed it | New pipe, a pump the manual does not list, or a drain you cannot see |
| Water coming up at the air gap or the floor drain | Floor drain not taking the flow. Manitowoc: the floor drain has to be large enough. Hoshizaki: 2 inch air gap on the KM books we opened | Clear a buried grate. Do not cap the air gap | The building drain is still full. Plumber. Not a code opinion from this page |
| Water down the outside of the bin at the head joint | Torn or missing bin-top gasket (Scotsman 17359902; flake/nugget service manual) | Look. Do not lift the head | Gasket replacement. The book says use a hoist if the head is heavy |
| Drip at a back fitting you can see | Loose supply or drain connection (Manitowoc inspection line; CU50 install check) | Look. Seat a hose that has slipped off and stays on. Do not keep tightening a nut, and do not tighten plastic | It still drips, or the fitting is cracked |
| Droplets on a cold pipe, fittings dry | Condensation. Manitowoc and Ice-O-Matic both say insulate cold inlet or drain lines | Confirm the fittings are dry | Insulation that means opening a wall |
| Uneven sheet, water over one side of the trough, cabinet rocks | Not level (Manitowoc checklist; CIM within 1/8 inch; Hoshizaki level foundation) | Level on the legs, if it is not sealed to the floor | Sealed to the floor, or the floor will not hold it |
| White crust, slow harvest, and a weep from the water system | Scale on a valve, float, or distributor (SB20-0002; KM float switch; Prodigy plugged distributor holes) | Cleaning guide and the filter date | Float cleaning, valve diaphragm, or a distributor you have to disassemble |
| Warm water from a second hose, only while the machine runs, sheet says water-cooled | Condenser discharge, which those books expect in the drain | Hose on the fitting, not teed into the bin, end at the floor drain | Regulating-valve adjustment, gauges, or a new condenser line |
| Puddle only in the first hours, bin was empty, no water on the floor later | CU50: first batches melt until the bin cools | Wait through that book’s first-day note. Scoop so the pile is not bridged | Still standing water the next day. That is the drain row |
Stop and call a licensed tech
Stop when the next action is any of these.
- The shutoff does not stop the water, or water seeps from the base after you have closed it. Hoshizaki’s KM-81 instruction already says call. A leak over a dining room or a walk-in electrical panel is the same stop. Do not keep the machine running “to see which cycle it is.”
- Any panel the owner manual does not give you, and anything inside it: inlet valve, purge or dump valve, float, float switch, water pump, distribution tube, water-regulating valve. The corrections those service charts print — replace, adjust, clean the float, check the curtain switch — are the tech’s.
- Refrigerant. A water leak and a refrigerant leak are different. The CIM maintenance line groups them in one “check for leaks” sentence for the technician. We will not describe gauges, dye, or adding charge. The data-plate refrigerant is already a repair vs replace topic.
- Cutting or re-pitching drain pipe, adding a pump the manual does not list, or changing an air gap. Check your local plumbing code and a licensed plumber. Hoshizaki’s 2 inch figure is that book’s figure. CU50 says local code and does not print 2 inches. Do not pick one for the inspector.
- Lifting a modular head to replace bin gasket tape.
- A water-cooled regulating valve. The temperature bands above are how you tell the tech what the book asked for. They are not a screwdriver procedure.
- You do not have the manual that matches the model on the data plate. A CIMU 60 PSI float note is not a KM note. A C1448 245 PSIG note is not a C0330 note.
Tell the tech the model, the serial, whether the machine is air-cooled or water-cooled, where the water shows up, whether it runs with the machine off, and what you already checked (shutoff, kink, floor drain, level, filter date). That is the useful call. A leak that comes back after a valve or a pump is replaced is the repair vs replace conversation, not a third hose clamp. Service life on the lifespan page is a retirement-age range. It is not a prediction that this leak means the cabinet is done.
What this page is not
- Not a service manual. No float-arm bend, no valve diaphragm order, no ohm test, no refrigerant pressure, no ounce table.
- Not the “no ice” page. A drain that melts tonight’s ice is not making ice. This page is the water that is not staying in the machine.
- Not the installation page. Pipe sizes, clearance, and the pre-delivery checklist stay on installation requirements. The slope table here is only the lines that explain a backup.
- Not the cleaning page or the filter page. Intervals and cartridges stay on how to clean and filters and descalers.
- Not a health-code or plumbing-code opinion. NSF listings and the installation manual are what you show an inspector. Check your local plumbing/health code and a licensed plumber.
- Not a review and not a price.

- Hoshizaki, KM-350 / 520 / 660 M_J instruction manual — follow water-supply and drain instructions to limit water damage; in areas where water damage is a concern, install in a contained area with a floor drain; a licensed plumber may be required; icemaker, bin, and water-cooled condenser drains run separately; condensation drain may join the icemaker drain or run alone; 1/4 inch fall per foot; air gap at least 2 vertical inches; condenser drain outlet 104–115°F five minutes into a freeze, with the water-regulating valve adjustment assigned to that install (retrieved 2026-10-15). KM-520MAJ is the current directory head in this family.
- Hoshizaki, KM-350 / 520 / 660 M_J service manual — only qualified service technicians should service the appliance; confirm the water tank fills and overflows during the 1-minute fill; a drain valve leaking by is water flowing down the drain when it should not, in the short-freeze diagnosis; scale on the float switch can make it stick; yearly line “water hoses — inspect and clean/replace if necessary”; failure to adjust the bin control on a dispenser can mean water leakage or ice overflow (retrieved 2026-10-15). We did not turn that bin-control warning into an adjustment procedure.
- Hoshizaki, KM-81 / 116 / 161 B_K instruction manual — if water collects in the bin and will not drain, or seeps from the base, turn the appliance off, close the shutoff, and call for service; a clogged bin drain can overflow; water hammer is a plumber’s item and can lead to leakage; drain outlet 1/2 inch FPT; bin and drip tray 3/4 inch FPT; a smaller drain line may leak or flood; 1/4 inch fall per foot; vent at least 12 inches above the outlet; 2 inch air gap (retrieved 2026-10-15).
- Hoshizaki, KM-81 / 116 / 161 B_K service manual, number 73262, issued 10-27-2025 — bin-drain check every 3 months or as often as necessary, pointing at the instruction manual; water hoses inspected yearly; the shutoff lines for a bin that will not drain and for water seeping from the base. The instruction manual’s bin-drain sentence is “as often as necessary,” not “every 3 months.” Both are printed above (retrieved 2026-10-15).
- Hoshizaki service bulletin SB20-0002 (18 March 2020) — inlet-valve diaphragm can be damaged by hard water or high chlorine; clogged inlet screens are not treated as warranty in that bulletin. The reassembly drawing is a technician procedure and is not copied here (retrieved 2026-10-15).
- Scotsman, CU50 installation and user manual, form 17-3314-01 — gravity-drain restrictions melt ice in the bin; tubing vented, no kinks, sloped; air gap often required by local code, no 2 inch figure; pump discharge as high as 10 feet; pour water into the bin and check for leaks; level the cabinet; first batches melt until the bin cools; 8 to 10 hours to fill; low bin level below 65°F can be normal; nothing but ice in the bin; rubber cap under the reservoir, near the back wall, in the winterizing steps; before calling, restricted drain or standing water in the bin (retrieved 2026-10-15).
- Scotsman, CU50 service manual — service diagnosis: water leak, check curtain and sump; inlet water valve leaks through during freeze; pump hose disconnected; water leaking from reservoir. Page dates visible in that PDF run from 2010 into December 2019. Confirm the copy that matches the serial (retrieved 2026-10-15).
- Scotsman, Prodigy series modular cuber technical service manual, models including C0330 — shutdown on maximum freeze time: water leak (purge valve, curtain, sump, pump hose), inlet water valve leaks through during freeze, pump hose disconnected, water distributor dirty; long freeze: water leak (purge valve, curtain) and inlet valve leaks through; incomplete ice: distributor holes partially plugged; short-freeze note names a sagging water-distributor bracket and service bulletin PS-9-2012, which we did not open (retrieved 2026-10-15).
- Scotsman, Prodigy Plus E user manual, form 17359902, models C1448 and C1848 (pages dated December 2014 and July 2018) — water-cooled models discharge warm water into the building drain; do not tee into the bin drain; do not tee the condenser drain into the reservoir or bin drain; reservoir vent about 8–10 inches; the PDF text says horizontal runs need “a 1/4 inch per fall per foot of run”; follow local codes for the air gap; the 1 inch air break is inside the reservoir; bin-top gasket gaps and tears; a reused bin’s gasket tape must be replaced or water leaks can occur; factory 245 PSIG and about 105–110°F condenser discharge water on these models (retrieved 2026-10-15).
- Scotsman, Prodigy Plus flake and nugget service manual — a torn bin-top gasket on a reused bin can cause water leaks, and that book says those leaks are not covered by warranty (retrieved 2026-10-15).
- Ice-O-Matic, Elevation Series CIM installation manual, part 9081484-01 Rev. V, 8/2024 — potable water 20–80 psi, regulator above 80; route bin, purge, and condenser drains separately; drain lines vented to prevent backflow; flexible tubing not recommended; condensate pumps not recommended; cold drains insulated to prevent condensation; a condensate drain connection on 22 inch and 30 inch heads for high humidity; purge fitting is plastic; level within 1/8 inch. The 9/2023 path previously used for Rev. U returned 404 when we checked on 2026-10-15, so this page cites Rev. V (retrieved 2026-10-15).
- Ice-O-Matic, Elevation Series CIM technical service manual, 9/2025, read from the Webstaurant PDF — high float switch signals the board to close the inlet valve; six-month maintenance: check for water, refrigerant, and oil leaks; inspect the water distribution tube; water-cooled regulating valve maintained at 250 psi discharge with water leaving at 100–110°F. Electrical-disconnect warning on that maintenance section. The copy we opened was that retailer PDF of the OEM manual (retrieved 2026-10-15).
- Ice-O-Matic, CIMU undercounter service manual, header date 5/21/26 — float valve; if it will not stop the water, pressure must not exceed 60 PSI on this book; distribution tube and mineral buildup; purge valve must be fully closed during freeze, and a leak-through extends the freeze. This is not the Elevation CIM float-switch machine (retrieved 2026-10-15).
- Existing VenueIce pages this article points at instead of repeating: not making ice, how to clean, installation requirements, filters and descalers, repair vs replace, how long a machine lasts, air-cooled vs water-cooled.
If two sheets disagree, use the PDF that matches the serial.
